During this private workshop we will come into contact with an Umbrian tradition: butchery. Butchering is a very ancient profession, and Umbria, in particular, has managed to make it a true culinary art renowned since Roman times. Today our chef will talk about the anatomy of the pig, the different types of cuts and will teach us all the secrets of this culinary tradition: from the basic techniques to meat processing, to the salting and seasoning of the meat, to the production of sausages.
