The Langhe hills around Alba are the source of the Tartufo Bianco d'Alba — white Alba truffle — widely considered the most prized truffle in the world, and unlike black truffle it still can't be cultivated: every one sold is genuinely wild-found. Hunting season runs roughly from October through December or January, which is why this is one of the few food experiences in Italy that's genuinely seasonal rather than available year-round.
A real hunt is done with a trained dog and its handler (a trifolau, in local dialect) — not pigs, which are traditional in some other truffle regions but tend to eat what they find. You'll walk wooded ground with the dog and handler as they work, learn how they read the dog's behavior, and — if the season and the ground cooperate — see an actual truffle dug up before tasting it, usually shaved fresh over a simple dish or paired with a Barolo or Barbaresco tasting.
